Scallops with Citrus Ginger Sauce

Citrus is abundant this time of year, and readily available. A quick drive through neighborhoods and trees are laden down with fruit. We joke if you pay for your citrus this time of year, you must not have any friends (laugh). So, it’s no surprise we look for ways to use fresh citrus to make bright and boozy cocktails or to create a simple showstopper main dish, such as this one, using fresh Florida sea scallops and peak season citrus.

This recipe is proof when you use fresh ingredients, the flavors come alive, it takes very little effort when you aim to keep it simple.

 

Scallops with Citrus Ginger Sauce

Ingredients:
1-1/2 lbs sea scallops
Sea salt, to taste
2 Tbsp. grape seed oil
1 orange, zested and juiced
1 lemon, juiced
1 Tbsp fresh ginger grated
2 Tbsp butter or ghee
Fresh thyme, for garnish

Directions:
Pat scallops dry with a paper towel, then sprinkle the scallops with sea salt.

Heat oil in a sauté pan over medium-high heat. When the oil is hot (nearly smoking), place the scallops in the pan. Sear scallops approximately 1-1/2 to 2 minutes on each side until almost opaque throughout. remove scallops to a plate.

Reduce the heat to medium and add the orange and lemon juice, orange zest, ginger and butter to the pan. Whisk the sauce in the pan until it’s simmering, then return the scallops to the pan and spoon the sauce over the scallops.

Plate the scallops, drizzle more sauce on top and garnish with thyme.

Makes 4 servings.
