Argula-Proscuitto Flatbread Pizzas
Recipe from Food Network
2 pieces lavash or other flatbread, halved
1 tablespoon extra-virgin olive oil, plus more for brushing
1/2 cup grated fontina cheese (about 2 ounces)
4-ounces thinly sliced proscuitto, torn
4 cups baby arugula
1 bulb fennel, halved, cored and thinly sliced
2 tablespoons roughly chopped parsley
1/2 red onion, thinly sliced
2 tablespoons balsamic vinegar
Kosher salt and freshly ground pepper
1/2 cup crumbled gorgonzola or other blue cheese (about 2 ounces)
1. Preheat a grill to medium. Lightly brush the lavish with olive oil, then grill until marked on the bottom, about 2 minutes. Flip the bread and immediately top with fontina. Continue grilling until the cheese melts, about 2 minutes. Transfer to a platter and top with the proscuitto.
2. Combine the argula, fennel, parsley and red onion in a large bowl. Drizzle with the vinegar and 1 tablespoon olive oil: season with salt and pepper and toss. Pile on top of the pizzas; sprinkle with the gorgonzola. Serve.
A fantastic summer dinner! I love to use flatbread to make pizza too…so much easier and so delicious!

A great summer dish with prosciutto & greens. Flatbread is such fun to use and much easier than pizza dough.Sam
What beautifully simple food, Velva. 🙂 When things warm up a bit I will happily go outside to grill some of these beauties. 🙂

This scene just draws me in — that grill is to die for!, and what an idyllic summer supper!
Looks like a real winner Velva
What a wonderful way to beat the heat, just not a bleu cheese fan so I would have to substitute with maybe a goat cheese! Kenny wants to know what kind of wine that is………….Thanks Velva!

Your recipes are always perfect for me Velva. Looks delicious and great combination of flavours. I always grow arugula in the garden…we usually call it rocket in Oz land.
Dear Velva, I am happy to hear that your summer is wonderful. That is the way it should be.These flat-breads look great. Blessings, Catherine
what a great dinner to wine – oh i meant wind! LOL! down to! I love arugula and the nutty woodsy flavor it brings and the flatbreads looks wonderful
Isn't it great to be back home in your own backyard with your own grill after a great vacation? I would love one of these and a nice glass of wine. They look just wonderful.
I like how you wind down — this sounds wonderful! I'm always up for a delicious flatbread, and I love these flavors. 🙂
This sounds delicious but I would also have to make the flatbread as well. I have never seen them here though I have seen pizza bases, I did try the latter and I was not impressed! Relax and enjoy sounds like a good idea 🙂 Take care Diane

Simply fabulous!! I use my grill for nearly everything, and pizza on the grill is a favorite. Had not thought to just use a flatbread… Brilliant!! And the arugula? My favorite!
i love flatbread pizzas, especially when they're grilled! your topping is elegant yet super flavorful and delicious, a combination that's sometimes hard to achieve! 🙂
My husband loves to grill throughout the year. Funny though, we've never had pizza on the grill. Your toppings look so delicious. This is something I definitely want to try.
