Apple Pecan Cobbler

If I told you that I had 25 pounds of apples would you believe me? Of course you would. If you have been reading this blog long enough, you know that I have a love affair with seizing opportunities to purchase fresh seasonal bounty in bulk. My problem is always after that peak experience of buying, and my romantic notions of the possibilities, not to mention a few eye rolls from my husband, is the reality that I have 25 pounds of apples.
With my apples, and new fire red apple peeler in hand, I managed to preserve several quarts of homemade apple sauce and apple butter, and lastly apple pecan cobbler.
This is only an illusion my friends. The first piece was done politely, the rest I ate handily right out of the pan.
Apple Pecan Cobbler
Serves 8

Ingredients:
4 cups thinly sliced apples
1/2 cup sugar
1/2 teaspoon ground cinnamon
1/2 cup chopped pecans
1 cup all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1 egg, beaten
1/2 cup evaporated milk
1/3 cup butter, melted
1/4 cup chopped pecans
Directions:
1. Preheat oven to 325 degrees F (165 degrees C).

2. Generously grease a 2-quart baking dish.
3. Arrange apple slices in an even layer in the baking dish. In a small bowl, mix together 1/2 cup sugar, cinnamon, and 1/2 cup pecans. Sprinkle mixture over apples.
4. In a medium bowl, mix together flour, 1 cup sugar, baking powder, and salt. In separate bowl whisk together egg, evaporated milk, and melted butter. Pour milk mixture into flour mixture all at once, and stir until smooth. Pour mixture over apples, and sprinkle top with 1/4 cup pecans.
5. Bake in preheated oven for 55 minutes.

I've often added walnuts to a cobbler. Just know I'd love this. We, too, eat apples, nearly daily. Unfortunateley an early frost last year hurt our own trees 🙁 Have had to buy them!

I am an opportunist too. Not only with food but with mid-century furniture as well. I don't know which one earns me more eye rolls from my husband, but thank goodness he has a good sense of humor. He would never mind a truck load of apples if he got to eat some of this cobbler.

hehe….I'm feeling better that I'm not the only one who loves to buy in bulk when the fruit is in season! They are simply the best, aren't they? :)Applesauce and butter sound yummy. But this Apple Pecan Cobbler is awesome, so perfect for this cold weather. And I think eating straight out of the pan is definitely the way to go! Have a wonderful weekend.

I'm smiling, because our home in Michigan years ago had an orchard of apple trees! So way back then, I learned to make applesauce and numerous apple dishes.This looks yummy, Velva. There something about evaporated milk that makes a recipe so much richer, isn't there?

You have 25 pounds of apples in January! I live in the wrong state. I would make do just fine with the entire pan as my dish and happily chomp throughout the day. Feeling virtuous. Because it has fruit in it.
