Easy Homemade Granola

There is something undeniably comforting about homemade granola. The best part? Homemade granola is incredibly easy to make and once you start, it is hard to go back to store bought. Homemade granola is not just more affordable, but it is better for you. You have control over the ingredients, no excess sugars, mystery oils, or unnecessary additives. You have wholesome, real food that tastes just the way you like it.
Whether you sprinkle it over yogurt, pour cold milk over a bowl, or grab a handful straight from the jar (highly recommended), this granola quickly becomes a staple you will always want on hand.
Making homemade granola is also a smart way to use up what you already have in your pantry. A handful of nuts here, some seeds, and dried fruit. Granola is wonderfully flexible and forgiving, and I need forgiveness in the kitchen.
Making granola at home is one of those small kitchen rituals that delivers big rewards. Granola is nourishing and delicious. Try it, and you may find yourself wondering why you ever bought granola in the first place.
Easy Homemade Granola
Ingredients:
4 cups rolled oats
2 cups nuts and/or seeds (ex: Pecans, walnuts, almonds, pepitas, sunflower)
1/2 cup chia seeds (optional)
1 teaspoon sea salt
1/2 cup olive oil
1/2 cup honey
2 teaspoons vanilla
** Optional: halfway through baking add 1- cup coconut flakes
** Optional: After baking add 1 cup dried fruit
Directions:
Preheat oven to 350 degrees F. Line a baking sheet with parchment paper.
In a large bowl, mix: oats, nuts, seeds, including chia seeds, salt and cinnamon.
Stir in: Olive oil, honey and vanilla and mix until everything is well coated.
Spread evenly on a baking sheet. Bake  20-25 minutes. At the halfway point (10-12 minutes) Stir; add coconut flakes. Optional: Press down for chunkier granola.
Bake until lightly golden: Cool completely. Don’t touch it! This is what will make it crispy. Once cool: Add dried fruit and chocolate chips.
Storage:
Airtight storage container 2 weeks
Freezer 3 months

Experiment with spices like nutmeg or cardamom for a subtle twist

Oh I couldn’t agree more – homemade granola is one of the best things ever! And it’s so much cheaper than buying store-bought granola. We make a similar version, but use maple syrup instead of honey. I’ll have to try honey next time!
