Easy Summer Peach and Brie Upside Down Tarts

As summer ends there is still time to celebrate the last of the summer peaches with one of the simplest fruit tarts you can make at home. Don’t despair because if you can’t find summer peaches there are still plenty of stone fruits available this time of year plums, nectarines, and apricots, all are perfect for these tarts. There are numerous ways to make this as a savory tart too, but I digress.

You may look at these delicious fruit tarts and think what a great summer dessert. Don’t underestimate the power of these fruit tarts. They make a great appetizer too.

Five ingredients, 30 minutes or less. It is unapologetically simple.

Peach and Brie Upside Down Tart
Makes 8 Tarts

Ingredients:
An extra large drizzle of honey
2 fresh peaches, sliced
8 slices of brie cheese
1-1/2 sheets puff pastry cut into 8 equal size squares (A pizza wheel works great)
1 egg beaten

Directions:
Preheat oven to 350 degrees F.
Add an extra large drizzle of honey to a parchment lined cookie sheet. Make 8 spaces and top the honey with slices of fresh peaches, and slice of brie cheese. Drizzle with more honey over the brie, and cover with a square of puff pastry, and brush with beaten egg.
Bake for 20-25 minutes. Use a spatula to carefully flip each pastry. Serve warm.
