Chipotle Lime Shrimp

The first cool breeze has been felt in North Florida-YEAH! Fall may actually arrive and take with it, the hot, humid and steamy Florida weather, at least for awhile.
While Mother Nature is contemplating a cool and crisp Autumn, I was contemplating a spicy grilled shrimp recipe that I came across while reading Kevin’s blog www.closetcooking.blogspot.com Our friends really enjoyed this shrimp recipe and I wanted to share it with you.
Chipotle Lime Shrimp
(Serves 4)
Ingredients:
1 chipotle chili in adobo (chopped)
2 teaspoons adobo sauce
1 teaspoon cumin seed (toasted and ground)
1 Tablespoon brown sugar
1 lime (juice and zest)
2 Tablespoons cilantro chopped
1 pound shrimp (peeled and deveined)
Directions:
1. Mix in chipotle, adobo sauce, cumin, brown sugar, lime zest, lime juice and cilantro in a bowl and let marinate for 20 minutes.
2. Skewer the shrimp or place shrimp in a grill basket
3. Oil up the grill and grill the shrimp for approximately 2-3 minutes per side.

I make something similar – but not with adobe sauce so of course – need to try your version. Shrimp on the grill is as good as it gets – and a little spice enlivens my life!

This looks soooooo gggooooooooooddddddd. I love all the pictures on your blog. You make them look extra delicious (I know they DO taste good in real life). My attempt always makes the food look like dog food. (And let's just not even discuss whether it does taste like so) I'll have to try the recipe when we invite people which happens about 3 times a year… I am people-deprived.

sure, rub it in… My guess that your fall breeze doesn't compare to our fall breeze here in god's country (Kansas). And there is no chance of us getting those beautiful shrimp…And I love grilling on those pans with the holes in em… Same as kabobing without all the effort.these (and the recipe) look great!

Looks great. I saw this over at his site too. Fantastic. Our weather fluctuates 40 degrees from morning until afternoon. I wake up wanting cool weather food like soup but by the time dinner roles around its warm and soup seems silly. Argh! This shrimp looks like a good inbetween the seasons food.
