Easy Lemon Cookies

One bowl, five ingredients, what’s not to love! These lemon cookies are ready in a snap.

Easy Lemon Cookies
Makes 15-18 cookies


1 (16-18 ounce cake mix)
2 eggs
1/3 cup vegetable oil
1 teaspoon lemon extract
1/3 cup confectioners sugar in a bowl, set aside.

Preheat oven to 375 degrees F. (190 degrees C.)

Pour cake mix into a large bowl. Add eggs, oil, and lemon extract. Stir until well blended. Drop a teaspoonful of dough into a bowl of confectioners sugar. Roll the dough around until they are lightly covered, Place them aside on an uncreased cookie sheet.

Bake for 6-9 minutes. The bottoms will be light brown and the inside chewy.
