It’s late Spring, we are in Portugal. The cafes are humming, the weather is stunning, it’s Spritz time! The European remedy to “I like to start drinking sooner, but it’s too early.” I gave a stink eye to the shade of an orange sunset libation served up in ice packed jumbo size wine glasses, with a fat orange slice, literally filling the cafe tables everywhere including ours, minus me, at least initially.
My Husband ordered the Aperol Spritz for the first time against a perfect backdrop, a seaside cafe in Portugal, a stone throw from the Atlantic Ocean. My interest was piqued. I reached over took a drink from his glass and thought immediately, “I like this because I am in sitting in a cafe in Portugal by the water, and soaking up the warm air with good friends. This drink won’t be the same when I am home.”
Fast forward several weeks and we took this drink for a test spin. The Aperol Spritz felt the same drinking it with friends on the patio or anywhere. My two cents is to use a good dry Prosecco.
Makes One Cocktail
Ice Cubes (we used a cocktail sphere ice cube)
3 ounces Aperol
3 ounces good quality dry Prosecco
1 ounce Fever Tree or other good quality club soda
A thick orange slice
Add ice to balloon or other globe style wine glass until it is almost full. Add the Aperol, Prosecco, and club soda. Place an orange slice in the glass. Stir. Ready to serve.
Note: You can modify the amounts to adapt your taste.
