This is the last hurrah of summer. Finally, cooler temperatures have arrived. Just as soon as we get done drinking this mojito we will say good bye to summer. Drink up!
Makes 1 drink
1/2 lime, quartered into wedges
6 chunks of fresh pineapple
5 mint leaves, plus 1 sprig for garnish
1 ounce simple syrup
Splash of club soda
2 ounces good quality rum
Put the lime, pineapple and mint in a highball glass and muddle with the back of a spoon or muddler. Add the rum, simple syrup, and club soda, stir vigorously. Fill the glass with crushed ice and stir again.
Garnish with a pineapple wedge, lime and a sprig of mint.
A thing of beauty! Where was this last night?! We will make these for sure! Love!
This looks so good! I think I should make one and sit in my back yard and pretend I am in Hawaii:) or Florida..lol

Never met a mojito I didn't love. I'll have to meet up with this pineapple guy ASAP!
Girlfriend, you know that this sucker has my name written all over it! Gorgeous!
That is a great hurrah! Looks so good, perfect way to say goodbye to summer!
dang you make good drinks – this one looks so refreshing I can only imagine the trouble it would get me into.
I am soooo not ready to say goodbye to summer (ever)! So I can enjoy this wonderful creation all year long.
I really wish I can have this now!
This is one stunning and refreshing looking drink!

What a great way to extend summer just a little bit…even if I have to drink it inside with the heater on…
You had me at mojito…
That is a great looking drink. I know I would luv it.
Looks fantastic…I need one now…at work

Party in a glass! Now that autumn has arrived, it's downright tropical here in the Northeast, so I have no excuse not to enjoy this pineapple wonder!
My wife has decided she likes mojitos and this looks right up her alley.
I remember at the beginning of the summer I was all ambitious and I tried to grow my own mint so I could make peach mojitos – one of my favorite drinks. Boy did I fail, because I did not make a single one. Thanks for the reminder. It's not too late yet!
It's 85 degrees and raining, this would be a sure way to cool off.Mimi
Beautiful mojito! Love fresh pineapple, so I will have to make these soon!

With the heat we are having where I live, this will go down nicely. I love a good mojito but the pineapple is a wonderful addition.
I had my first Pear Majito the other day. I wasn't very impressed with it. Pineapple is one of my favorite fruits so I will definitely have to try this one. Yummy.Southern Eclectic

We are having fairly warm days now and this is perfect for a lazy afternoon in the garden!
Pineapple and mint sounds totally divine. Friday night cocktail? I think YES.
Velva – Pineapple is one of my very favorite flavors in a cocktail. I could go for one of these any day of the year 😉
The Food Hound
Instead of eating pineapple with my breakfast, I could just drink this!! Where is the downside to that? 🙂 Oh yeah, showing up drunk to work…
You always post the best drinks! Happy friday!

This looks so tasty! I love all the lime quarters you put into it. I definitely nice touch!
By the way, I love your blog and have given you an award on my site. http://mouth-open.blogspot.com/p/awards.html
Yea Velva! I even have a muddler. I love, love, love your drink posts!
I love pineapple – but summer seems long gone!
Do we have to say goodbye?? I think I could drink this through the Winter, too! Looks tasty!
I feel so sad that summer is getting over, but can't wait for the fall colors :-)Love pineapple in anything and Mojito is no exception 🙂
I know this is a drink recipe but if you read the ingredients, it sounds like a great baste for grilled pork too!

A fab grown up drink,..so special too!

I have never really like mojito's but that pineapple in them might just change my mind! That was a perfect addition to that drink! I'll have to give that recipe a try, I know my wife will enjoy them!
How utterly divine, Velva!! I love mojitos so very much and this recipe is even better than the original. 🙂
Love the pineapple in that mojito!
What? Jeez Louis, how the heck did I miss this post, Velva?! I saw a \”mixologist\” make a mojito on TV muddling everything in the bottom of the glass WITH the ice! It worked well cuz it added a bit of water to the cocktail from the crushed ice and most likely really chilled the cocktail. By the way, if you want to make mojitos, I suggest you invest in a muddler, a spoon (as the recipe suggests) does not work. It cuts into the fruit and mint and is ineffective. Wooden muddlers are about $7, don't get metal.Wish we lived closer, me likey your cocktail hour!

I'm loving the drink but hating the saying good bye to summer.
I am so coming over for a drink….
