Prosciutto, Fresh Fig, and Manchego Sandwiches

Autumn has arrived and for many of us the weather remains warm with the possibility of still enjoying the bounty of the late summer’s harvest.
Prosciutto and fresh figs are a traditional Italian flavor combination. Here, along with Manchego cheese and jam they create a sweet and savory sandwich.
This is a light fresh sandwich that can be easily served up as an entree in less than 20 minutes.
Prosciutto, Fresh Fig, and Manchego Sandwiches
Makes 4 sandwiches

4 teaspoons Dijon mustard
8 (3/4 ounce) slices Italian bread, toasted
1 cup baby arugula
2 ounces very thin slices prosciutto
2 ounces Manchego cheese, shaved (note: Manchego is a Spanish cheese similar to pecorino Romano which you can substitute).
8 fresh figs, cut into thin slices
2 tablespoons fig jam
1. Spread 1 teaspoon mustard over 4 bread slices. Arrange 1/4 cup arugula over each bread slice. Divide prosciutto evenly over bread slices; top evenly with cheese and fig slices. Spread 1-1/2 teaspoons jam over remaining 4 bread slices. Top each serving with 1 bread slice, jam side down.
That sandwich look absolutely wonderful! What a great combination of flavors. I'm not sure that my kids would go for them, but I'll be saving this recipe for myself!
I've never tried figs before and they're certainly on my to eat list! This is a new flavor combination for me that I would love to try!

Seems I'm seeing lots of dishes with fresh figs on blogs and TV shows, but I don't think I've ever had one – guess I'll have to give one a try. Sandwich looks very good.

I have seen quite a number of recipes using figs recently, and all of them delicious, yours included! Never tried fig in a sandwich before. This is definitely interesting!

Oh Velva, yum, yum, yum! Figs and ham, one of my fave combos! Back in Sydney my restaurateur boss taught me figs stuffed with goat cheese and wrapped in prosciutto, baked and drizzled with honey! Figs: Food of the Gods!

Our fig tree occasionally manages to produce ripe fruit, but I have to confess I'm not a fan. Manchego, though, is lovely.

Velva, I found a guy who grows fig trees in Jersey! I want one, but have to find a plot of land to plant it. He brought them over from his motherland 🙂 I am sure he also eats his prosciutto and Jamon when he can get it!
